# How to Cook:

01 - Preheat oven to 375°F (190°C).
02 - Heat olive oil in a large ovenproof skillet or casserole over medium heat. Add onion and garlic; sauté 2 to 3 minutes until softened.
03 - Stir in orzo and toast for 1 minute, stirring frequently. Add canned diced tomatoes, chopped spinach, oregano, chili flakes, and vegetable broth. Season generously with salt and pepper.
04 - Nestle the block of feta into the center of the dish. Drizzle with a small amount of additional olive oil.

08 - Allow to stand for 5 minutes before serving. Serve warm.

# Expert Advice:

01 -
  • If you've never tried feta baked right into your orzo, you're in for that dreamy, creamy pasta moment.
  • It's as hands-off as dinner gets, but the flavors are big and bright enough for guests (or just a cheer-you-up solo night).
02 -
  • Rushing to stir the feta immediately out of the oven leads to a soupy mess—letting it rest is essential for perfect texture.
  • Switching to whole wheat orzo once made the bake slightly nuttier, which turned out to be a happy accident I now repeat.
03 -
  • Bake on a lower rack if you want a deeper golden crust on the bottom.
  • Tossing the spinach in at the last minute helps keep its color vibrant and flavor bright.
