# What You Need:
→ Rice Pudding
01 - 1/2 cup Arborio or short-grain rice
02 - 2 cups canned full-fat coconut milk
03 - 1 cup whole milk or plant-based alternative
04 - 1/3 cup granulated sugar
05 - 1/4 teaspoon fine sea salt
06 - 1 teaspoon vanilla extract
→ Mango Layer
07 - 2 medium ripe mangoes, peeled and diced (about 2 cups)
08 - 2 tablespoons honey or maple syrup
09 - 1 tablespoon fresh lime juice
# How to Cook:
01 - Combine rice, coconut milk, whole milk, sugar, and salt in a medium saucepan. Bring to a gentle simmer over medium heat, stirring often.
02 - Reduce heat to low and simmer uncovered for 25 to 30 minutes, stirring frequently until the rice is tender and the mixture is creamy. Remove from heat.
03 - Stir in vanilla extract. Allow mixture to cool completely to room temperature.
04 - Blend diced mangoes with honey and lime juice until smooth. Adjust sweetness to taste.
05 - Place half of the mango purée evenly into popsicle molds.
06 - Spoon cooled rice pudding over the mango purée layer without overfilling.
07 - Add the remaining mango purée as the top layer in each mold.
08 - Insert popsicle sticks and freeze for at least 4 hours until solid.
09 - Briefly dip molds in warm water, then gently remove the popsicles.
