14 - 1/4 cup mayonnaise
15 - 1/4 cup sour cream

17 - 1/2 teaspoon smoked paprika
18 - 1/4 cup cotija or feta cheese, crumbled
19 - Juice of 1 lime
20 - 1/4 cup fresh cilantro, chopped

# How to Cook:
01 - Rinse the rice under cold water. In a saucepan, bring water or chicken broth with salt to a boil. Add the rice, reduce heat to low, cover, and simmer until tender (15–20 minutes for white rice or 35–40 minutes for brown rice). Fluff the rice with a fork once cooked.
02 - In a mixing bowl, combine olive oil, chili powder, cumin, paprika, garlic powder, salt, and black pepper. Add chicken and toss thoroughly to coat with the spice mixture.
03 - Heat a large skillet over medium-high heat. Add seasoned chicken to the skillet and cook for 5–6 minutes per side, or until browned and cooked through. Remove from heat, allow to rest for 5 minutes, then slice or dice into bite-sized pieces.
04 - In the same skillet, melt butter over medium-high heat. Add corn kernels and sauté for 4–5 minutes until lightly charred in spots. Let cool slightly, then transfer corn to a bowl and mix with mayonnaise, sour cream, chili powder, smoked paprika, crumbled cheese, lime juice, and chopped cilantro until well combined.
05 - Divide the cooked rice evenly among four serving bowls. Top with sliced chicken and generous spoonfuls of street corn topping. Garnish each bowl with avocado slices, additional cilantro, and lime wedges. Drizzle hot sauce if desired.
